Spam™ Hot Dish

Ingredients

• 1 can SPAM™
• 1 bottle porter beer
• 2 tubes Pillsbury Grand butter biscuits
• 8 oz sour cream
• 6 oz cream cheese
• 1 cup half and half (needed to “cut” the thickness of the mixture)
• 1 to 2 tablespoons butter
• 1 ½ cup cheddar cheese
• ½ cup parmesan cheese
• 2 cups wild rice
• 1 can cream of chicken soup
• 1 leek, sliced
• 1 bunch green onions, chopped
• 1 red pepper, diced
• 2 turnips, cubed
• 1 teaspoon garlic, minced
• Crushed red pepper (to taste)
• Ground black pepper
• 1 bag Old Dutch potato chips

Preparation

Rinse SPAM™ off and cut into cubes, place cubes in bowl and soak with the porter beer from two hours to overnight.

Read the directions on the Pillsbury Grand biscuits – cover bottom of your hotdish pan with the biscuits and cook as directed. Let this cool.

Get out the griddle, plop some butter in the pan – and let the frying pan get hot – take the marinated SPAM™ out from its yummy marinade and brown the cubes in the butter.

In Lumberjack Sized Bowl – mix in all the other ingredients except the potato chips. Be prepared for an upper arm workout with all the heavy dairy and cheeses and turnips and SPAM™ doing their dance, dance revolution!!! (This is when the addition of the half and half works its magic – continue adding some half and half so mixture is more like stew and less like the consistency of concrete.)

Once it is all mixed, place on top of the pre-cooked biscuits. Sprinkle with freshly ground pepper and some hot pepper flakes (per cook’s personal taste – personally, I like a little ZING!)
Rip open that bag of chips and crush the chips on top of this big foot-sized hotdish!

Bake at 350 degree for an hour, until golden brown on top. The hot dish is extra HOT, so make sure to let it set up for ten minutes and let those flavors meld together!

Enjoy in your home, the nearest potluck or any church basement.
